Анотація: In this book, a wide range subjects in biorheology are dealt with, from fundamentals to applications. The inclusion of quite substantial chapters concerned with application aspects such as the latest studies on foods, cosmetics, personal care products, and biological tissues, related regenerative medicine, is one of the features of the book. For the fundamental aspects, studies on the physicochemical characteristics of biopolymer, the key substance of soft matter, are listed. By contrast, in the application aspect, although the main topic is the rheology of foods, focusing on the "texture" of mastication or swallowing, novel studies on cosmetics and personal care products concerning feeling during the lubrication by those products are also considered. This book will engage both a professional and an academic audience interested in soft matter, especially as related to food, cosmetics, and personal care products. In particular, this work will have a special appeal to scientists and engineers in the food and cosmetics industries and to graduate students preparing for those fields.

Анотація: This book provides new clues for understanding electrostatic charging in solids and liquids, resulting from the surge of research in this active area of science that is taking place since the 1990's but is still largely unknown to most researchers, lecturers and engineers. Written by a leading researcher in this field, this book describes the formation and properties of the Earth capacitor, the production of environmental electricity and its effect on natural and anthropic systems and examines many situations in which water may play a decisive role in electrostatic behavior. The authors present an informed critique of the long-held assumption that pure substances should be electroneutral. In this regard, the authors show that charge partition and accumulation is expected considering the electrochemical potential under non-zero electrostatic potential, which prevails at Earth surface. This book provides conceptual tools to guide the reader through the complexities and consequences of electrostatic phenomena while covering exciting current topics such as energy scavenging from the environment, electrostatic based green production, energy-saving processes, electrochemistry at the solid-gas interface, therapeutic electrostatic treatments, applications in sanitation and pest control and control of atmospheric electricity and its use in climate engineering.

Анотація: This book presents a concise description of the acoustics of ocean sediment acoustics, including the latest developments that address the discrepancies between theoretical models and experimental measurements. This work should be of interest to ocean acoustic engineers and physicists, as well as graduate students and course instructors. The seabed is neither a liquid nor a solid, but a fluid saturated porous material that obeys the wave equations of a poroelastic medium, which are significantly more complicated than the equations of either a liquid or a solid. This volume presents a model of seabed acoustics with input parameters that allow the model to cover a wide range of sediment types. The author includes example reflection and transmission curves which may be used as typical for a range of sediment types. The contents of this book will allow the reader to understand the physical processes involved in the reflection, propagation, and attenuation of sound and shear waves in ocean sediments and to model the acoustic properties for a wide range of applications.

Анотація: This book presents an introduction to viscoelasticity, in particular, to the theories of dilute polymer solutions and dilute suspensions of rigid particles in viscous and incompressible fluids. These theories are important, not just because they apply to practical problems of industrial interest, but because they form a solid theoretical base upon which mathematical techniques can be built, from which more complex theories can be constructed, to better mimic material behaviour. The emphasis of this book is not on the voluminous current topical research, but on the necessary tools to understand viscoelasticity. This is a compact book for a first year graduate course in viscoelasticity and modelling of viscoelastic multiphase fluids. The Dissipative Particle Dynamics (DPD) is introduced as a particle-based method, relevant in modelling of complex-structured fluids. All the basic ideas in DPD are reviewed. The third edition has been updated and expanded with new results in the meso-scale modelling, links between the fluid modelling to its physical parameters and new matlab programs illustrating the modelling. Particle-based modelling techniques for complex-structure fluids are added together with some sample programs. A solution manual to the problems is included.

Анотація: This comprehensive work explores interfacial instability and pattern formation in dynamic systems away from the equilibrium state in solidification and crystal growth. Further, this significantly expanded 2nd edition introduces and reviews the progress made during the last two decades. In particular, it describes the most prominent pattern formation phenomena commonly observed in material processing and crystal growth in the framework of the previously established interfacial wave theory, including free dendritic growth from undercooled melt, cellular growth and eutectic growth in directional solidification, as well as viscous fingering in Hele-Shaw flow. It elucidates the key problems, systematically derives their mathematical solutions by pursuing a unified, asymptotic approach, and finally carefully examines these results by comparing them with the available experimental results. The asymptotic approach described here will be useful for the investigation of pattern formation phenomena occurring in a much broader class of inhomogeneous dynamical systems. In addition, the results on global stability and selection mechanisms of pattern formation will be of particular interest to researchers working on material processing and crystal growth. The stability mechanisms of a curved front and the pattern formation have been fundamental subjects in the areas of condensed-matter physics, materials science, crystal growth, and fluid mechanics for some time now. This book offers a stimulating and insightful introduction for all physicists, engineers and applied mathematicians working in the fields of soft condensed-matter physics, materials science, mechanical and chemical engineering, fluid dynamics, and nonlinear sciences.

Анотація: This thesis experimentally demonstrates the much discussed electronic charge-glass states in solids. It focuses on quasi-two-dimensional organic conductors of the ?-(BEDT-TTF)2X family, which form anisotropic triangular lattices, and examines their electronic properties using various measurements: resistivity, time-resolved electric transport, X-ray diffraction analysis, and nuclear magnetic resonance spectroscopy. The hallmark of the charge glass caused by geometrical frustration of lattice structure for those materials is successfully observed for the first time. The thesis provides new insights into the exotic properties of matter driven by strong electron correlations and crystalline frustration. The introduction enables beginners to understand fundamentals of the charge-glass states and the organic-conductor family ?-(BEDT-TTF)2X. The comprehensive and detailed descriptions of the experimental demonstration make this a valuable resource.

Анотація: This thesis demonstrates the adaptation of existing techniques and principles towards enabling clean and precise measurements of biomolecules interacting with inorganic surfaces. In particular, it includes real-time measurement of serum proteins interacting with engineered nanomaterial. Making meaningful and unambiguous measurements has been an evolving problem in the field of biology and its various allied domains, primarily due to the complex nature of experiments and the large number of possible interferants. The subsequent quantification of interactions between biomolecules and inorganic surfaces solves pressing problems in the rapidly developing fields of lipidomics and nanomedicine.

Анотація: This book brings together the many concepts and discoveries in liquid crystal colloids contributed over the last twenty years and scattered across numerous articles and book chapters. It provides both a historical overview of the development of the field and a clear perspective on the future applications in photonics. The book covers all phenomena observed in liquid crystal colloids with an emphasis on experimental tools and applications of topology in condensed matter, as well as practical micro-photonics applications. It includes a number of spectacular manifestations of new topological phenomena not found or difficult to observe in other systems. Starting from the early works on nematic colloids, it explains the basics of topological defects in ordered media, charge and winding, and the elastic forces between colloidal particles in nematics. Following a detailed description of experimental methods, such as optical tweezing and particle tracking, the book eases the reader into the theoretical part, which deals with elastic deformation of nematic liquid crystals due to inclusions and surface alignment. This is discussed in the context of basic mean field Landau-de Gennes Q-tensor theory, with a brief explanation of the free-energy minimization numerical methods. There then follows an excursion into the topology of complex nematic colloidal structures, colloidal entanglement, knotting and linking. Nematic droplets, shells, handlebodies and chiral topological structures are addressed in separate chapters. The book concludes with an extensive chapter on the photonic properties of nematic dispersions, presenting the concept of integrated soft matter photonics and discussing the concepts of nematic and chiral nematic microlasers, surface-sensitive photonic devices and smectic microfibers. The text is complemented by a large bibliography, explanatory sketches and beautiful micrographs.

Анотація: This thesis describes lyotropic chromonic liquid crystals (LCLCs) with exotic elastic and viscous properties. The first part of the thesis presents a thorough analysis of the elastic and viscous properties of LCLCs as functions of concentration, temperature and ionic contents, while the second part explores an active nematic system: living liquid crystals, which represent a combination of LCLC and living bacteria. LCLCs are an emerging class of liquid crystals that have shown profound connections to biological systems in two aspects. First, the assembly process of the chromonic aggregates is essentially the same as DNA oligomers and other super-molecular assemblies of biological origin. LCLCs thus provide an excellent model system for studying physical properties such as the elasticity and viscosity of these supramolecular assemblies. Second, LCLCs are biocompatible, thus serving as a unique anisotropic matrix to interface with living systems such as bacteria. This thesis deepens our understanding of both aspects. The noncovalent nature of chromonic aggregation produces the unique viscoelasticity to be found in LCLCs, which differs dramatically from that of traditional LCs. Anisotropic interactions between LCLCs and bacteria lead to fascinating phenomena such as the deformation of LCLCs with a characteristic wavelength determined by the elasticity of the LCLCs and the activity of the bacteria, orientationally controlled trajectories of bacteria and visualization of 24 nm flagella motion.

Анотація: This thesis focuses on the theoretical description of electro-osmosis of polymer solutions. In particular, it emphasizes the importance of considering non-uniform profiles of the solution viscosity and polymer concentration near a solid surface. The thesis begins with an introduction to fundamental theories and experimental observations for beginners in this field, concerning electrolyte solutions, electric double layers, and electrokinetics. In Chapter 2, the author discusses the linear response of electro-osmotic flow with respect to applied electric fields in aqueous polyelectrolyte solutions, and predicts a possibility of flow reversal caused by oppositely charged polyelectrolytes adsorbed on a charged surface. In Chapter 3, the author extends the discussion to non-linear electro-osmotic flow driven by applied electric fields in neutral polymer solutions. The dynamics of polymers are modeled and simulated using Brownian dynamics and kinetic theory. Finally, the thesis is summarized in Chapter 4. The introduction provides a comprehensive review of electrokinetics for graduate students and researchers interested in soft matter physics. An additional attraction is that readers can effectively learn various theoretical approaches to electro-osmosis.

Анотація: The book systematically introduces the mathematical models and solutions of generalized hydrodynamics of soft-matter quasicrystals (SMQ). It provides methods for solving the initial-boundary value problems in these systems. The solutions obtained demonstrate the distribution, deformation and motion of the soft-matter quasicrystals, and determine the stress, velocity and displacement fields. The interactions between phonons, phasons and fluid phonons are discussed in some fundamental materials samples. Mathematical solutions for solid and soft-matter quasicrystals are compared, to help readers to better understand the featured properties of SMQ.

Анотація: This thesis presents a theoretical analysis of the behavior of glasses under external perturbations, i.e. compression and shear straining. Written in a pedagogical style, it explains every facet of the problem in detail, including many crucial steps that cannot be found in the existing literature—making it particularly useful for students and as an introduction to the subject of glassy physics. In glassy systems the behavior under external compression and shear-strain is quite peculiar. Many complex phenomena are observed and grasping them fully would be a major step toward a complete theory of the glass transition. This thesis makes important advances in this direction, analyzing the behavior of glassy states in painstaking detail and reproducing it in the framework of a recently developed mean field theory for glasses that has proven extremely successful for jamming, demonstrating its predictive power in the context of metastable glassy states obtained through nonequilibrium protocols.
